An article I wrote about four years ago on making bread. Re-reading this, there isn't anything I disagree with in there, though it's pretty generic. (Well, okay, since then I've taken to mostly making round loaves, the last rise with them wrapped in a dishtowel, in a bowl. I carefully unwrap the bread, upend it on the hearth, and slash the top.)
Another article, including the recipe for Caponata. (It's near the bottom.) Note: I'll often use balsamic vinegar instead of wine vinegar.
If you can take Googlemaps as an arbiter, the results are in: No, it is not a "three hour drive" from Chicago to Cleveland.
