Aug. 9th, 2008 08:36 pmMaple syrup works pretty well as a substitute for palm sugar. (Hey, I'm in Ohio. I can get palm sugar, but it's kind of a pain. Getting maple syrup is easy. Somehow, this reminds me of
corivax) After hitting the farmer's market, I was going to make one of my typical lots of veggies and herbs with some rice and tofu deals. So I started out building up a sauce out of maple syrup, tamarind, shallots, sambal oolek, galangal and corriander. Just whisked together (with demon fork - I suspect the demon fork is important).
The rest of was pretty trivial. Made brown rice in pressure cooker. Sautee'd garlic and tofu with a little olive oil in wok. Added lots of green beans, sliced eggplant, lots of summer squash, and some of the above sauce. Covered and steamed. Added oyster mushrooms and lots of chopped peppers. Covered and steamed some more. Added rice, some tamari, and a little more of the sauce. Tossed vigorously, removed from burner. Added a few handful of chopped basil.
