Operation Eat All the Vegetables, redux
Jul. 25th, 2011 09:56 pmOn Saturday I biked out to pick up the CSA share. It had been a really hot week, and our share was on the small side. And of course with K coming back that evening I would have to share. So I packed it up on my bike, and continued on to the farmer's market, where I got chard, kale, green beans, eggplants, shiitake mushrooms and fresh pasta. (And then spent a while working out where to put it all until I could hand K's off to him.)
Yesterday I made mousaka for L and I. (Complete with a vegan bechamel on top. Heh.) Mostly I find myself eating more like I did last week, and I wonder if this will end up being some kind of sea change in my diet. Lunch was leftover mousaka, and a bowl of chard with a little pepper sauce. Dinner was a big pile of green bean, a small amount of tomato basil pasta and beans, and some green onions and thai basil. With a side of onions and cucumbers that had soaked in vinegar. There's...something. It's like my skin is happy with this food. I look at the vegetables that I have for the week, and vaguely worry that I might run out. (Yes, I can go to the store. The stores have fairly inferior vegetables.)
