How do you, or would you, cook lentils and/or rice?

I probably use lentils most often in soup. Chop up onion and/or garlic, sautee in oil. Add a cup of lentils, sautee over lowish heat until they start to stick. Add some water, and a bunch of vegetables (okay, if they're delicate vegetables, add them just before serving - I'm thinking tough ones, like carrots and celery). And maybe some wild rice, or barley, or quinoa. And if the vegetables didn't include something tart (tomato is good) add some lemon juice, or tamarind, or wine, or something. Simmer until lentils are tender. Add some salt and maybe some herbs.

One of my other favorite foods with lentils is my vegan larb. (Though if I'm not feeling vegan I use fish sauce.)

Sometimes I make mousaka with lentils. Depends on my mood mostly.

Rice... well, at the simplest I put equal amounts of brown rice and water into my pressure cooker, bring it up to high pressure and then cook for 12-15 minutes. Pressure cookers are worth it for brown rice all by itself. Brown rice is a real staple of my diet, and it gets used all over the place. Probably the simplest proto recipe is something like :

Simmer chick peas (or tofu), tough veggies (including alliums) and mushrooms in something tasty (wine, miso, soy sauce with a little mollases, brewer's yeast, water and lemon juice... whatever). Add more delicate veggies, and thickener to base if wanted (agar is what I've been using recently). Add herbs if handy. Mix in rice. Eat.
