One of the results of training so much is that my normal breakfast cereal just wasn't doing it. Nutritionally dense, calorically sparse, and I'd be falling over by ten. But I still wanted real food. So:
Beat two eggs. Mix in enough whole wheat flour to make a wet dough. Add enough water to make a thin batter, and then enough oat bran to make it thick. (I usually used more oat bran than flour.)
To this add one chopped banana, some other kind of fruit (strawberries, blueberries, blackberries, chopped apple...) and some crushed nuts. Whisk in 1/2 t baking soda.
Fry up. Drizzle with maple syrup.
