I'm not even sure what to call this one. I mean, it's lineage is from one of my favorite biryanis, which involved meat and dairy but which has spawned a lot of things I can eat. (And I make a bazillion variants.) But... it has gone a little adrift. Peanuts? Cumin? Suggestions?
(all measurements approximate)
Cook two cups of brown basmati rice
Put a casserole in the oven, heated to 350
Coarsely chop one large or two medium, or whatever, onions.
Sautee over low-medium heat, stirring occasionally, for a long time.
Meanwhile, locate and add:
1/2 t fengugreek (whole seeds, like everything else when applicable)
1/4 t cumin (or more?)
a couple of pinches coriander
1 clove
2 green cardamon pods
a fragment true cinnamon
a nice thick coating of aleppo peppers (I think smoked chilis might have been even better)
a smallish chunk of fresh ginger, diced
Really, just keep sauteeing it for a bit - take your time. Organize the spice rack. Clean some dishes.
Add 1/4 c peanut butter. (Or some tree nut butter if you're not me.) Sautee with onions until a giant sticky mess.
Add some water, a bit at a time, until you have a nice smooth sauce. Just as it's getting too thick again, add
The juice of one orange
a bit of orange zest
A large handful of dried sour cherries
A small handful of pumpkin seeds (or some tree nut of you're not me)
About a cup of chick peas (please, buy them dry and cook them in a pressure cooker - so much more flavorful that way, but whatever)
Salt to taste
A bit of olive oil (no really, the peanut sauce isn't enough)
Dump the whole thing into the casserole and bake for, oh, 15-30 minutes. At least 15 uncovered.
