Applebread
Sep. 5th, 2009 06:08 pmStill home sick. Feeling better, but at the price of sleeping all the fricking time. (I suspect this will pass soon, though.) Actually, other than sore joints and the merest hint of a cold, it's just the fatigue, which is common for me. (Yes, I could decide not to be fatigued. And then, later I'd be both fatigued and actually sick.)
And I missed the farmer's market. (I slept in. Then I sparred, and did a bunch of math, and took a bath... and went back to sleep for another four hours.)
So I made apple bread. This is probably an acknowledging the approach of autumn. It's pretty much the same general recipe as I was making last year, but I think I might have only posted the early, not later, forms of that. So:
Apple Bread (vegan)
Pre-heat oven to 350
Grate two apples (I use a microplane grater, but I suspect that's unneccesary.)
Mix in 2-3 tablespoons of oil (I prefer walnut oil, but whatever)
1/4-1/2 c maple syrup (depending on the sweetness of the apples and the local price of maple syrup)
a bunch of ground cinnamon and some ginger (fresh grated, ground, whatever).
Add 1.5 c rolled oats (or barley)
and 1+ c crushed nuts.
Mix in 1 c flour, and a scant t. baking soda.
Put into a greased baking dish (mine is probably an eight inch round) and bake for an hour.
