First, the basic recipe:
In wok or skillet, sautee' green beans in a little oil for a minute or two (this step can be skipped)
Add 1/8-1/4 c. liquid, cover, and steam until beans are just barely tender
Uncover, allow liquid to cook off (which is why you use as little as possible)
Add flavoring agents
Toss about with flavoring agents
Serve
A more specific recipe:
Sautee green beans in oil as mentioned above
Add 1/8-1/4 water, cover and steam
Uncover, allow remaining water to cook off
Add one tbsp salted bamboo shoots in chili oil, one tbsp chili paste mixed with fermented yellow beans*
Sautee for a moment or two more, and serve
* Or a tbsp XO sauce. Or some chili sauce and fish sauce. Or chili sauce and chinese pickled vegetables.
Other variations:
Sautee some garlic in the oil before you add the green beans. (This pretty much works for all mentioned variations.)
Use wine as the liquid. Use a handful of diced bell peppers as the flavoring agent, and then some salt.
Or, use wine as the liquid, and then add a handful of basil.
Or, use water as the liquid, cook it off, and then toss with lemon juice, fresh herbs, and some salt.
Or use a little fish sauce as the liquid, and then toss with basil, cilantro, scallions, and lime juice.
Or... well, you get the idea
