Mango Rice

I haven't been keeping up with the food project particularly well, in part because so much of what I've been cooking seemed like a variation on things I've already posted. And really, this is a variation, too, but different enough that it entertained me.
Mango Rice
Inspired by the contents of my kitchen
Cook two cups brown rice
Peel and chop a bunch of garlic (I used half a head)
Mince 1 tsp fresh galangal,
2 tsp fresh lemongrass
Add garlic, galangal and spices to hot oil in a wok.
Add one mango, butchered (or about two cups frozen mango chunks)
Add hot pepper paste to taste
Add a bunch of cashews,
one package firm tofu, cubed
a generous handful green beans, chopped into ~2" segments
1 red bell pepper, chopped coarsely
Fish sauce (or soy sauce) to taste
Cover and simmer over medium low heat (uncovering and stirring occaisionally) until beans are tender. The mangos together with the wet ingredients should make a thick sauce.
Turn up the heat and toss in rice. Cook, stirring vigorously, until the liquid is absorbed and the rice is warm. Add fish sauce / soy sauce / pepper paste to taste if needed.
Garnish with fresh basil, cut into ribbons.
Tastey.
