So I made this again. Same method more or less, but with more crunchy/chewy bits, and less moisture overall. Something about this version says "muffins" to me. It certainly parses more as food and less as gooey treat. The rest of the assembly is pretty much as described in the last recipe.
Maple Pecan Apple Oat Cake II
2 T palm kernel shortening
2 T walnut oil
1/2 c maple syrup
1 1/2 c rolled oats
1 c crushed pecans
1 t cinnamon
1/2 t ginger
2 cloves, 4 allspice berries (ground)
1/4 t salt
1/2 c flax seed faux egg*
1/2 c water, hot
2 t kuzu
1 1/4 c flour
1 t baking powder
1 tart baking apple apple, finely diced
