Thoughts on tasty things with interesting textures for quick breads and muffin type things?
Obviously, I've been playing around with quick breads. (I guess I didn't post the carrot zucchini honey vanilla nutmeg bread recipe.) Quick breads are entertaining, but white flour, though useful as a glue, is not, not really.
I use a lot of oats. I might pick up some other rolled grains. I've been using pecans and walnuts, and will probably use almonds as well. And of course fruits and veggies (though I'm kind of leaning towards crunchy things.) I'm kind of thinking the next one will probably be a spiced pumpkin oat bran thingie. (Hey, I'm having fun - the apple bread is something I'd wanted to make for years. And I'm finally getting the crunchy substantial texture out of things that I've wanted.)
But... want more ideas. Corn meal? Maybe course ground wild rice? Bulghur wheat? I'll probably play some with sprouted grain as well... Toasted amaranth? Oh, dear, green tea toasted rice muffins...
